Arame Salmon and Broccoli Salad with Courgetti Noodles

Looking for another takeaway lunch? Find some time to prepare the ingredients before hand and you will be ready to assemble and go in no time!
Just so you know, Arame seaweed is an Asian brown algae. It has a great texture and it’s slightly sweet flavoured.
We’ve also chosen courgetti noodles instead of wheat ones as they are low in carbs and high in fibre. Our salad give extra satiety and a combination of nutrients to help you boost your immune system.

Ingredients:

Serves 2

  • 100g green beans

  • 160g purple sprouting broccoli

  • 50g arame seaweed, or seaweed of your choice

  • 120g cucumber

  • 10g coriander chopped plus extra to garnish

  • 200g Smoked salmon

  • 2 Courgettes

  • 1tbsp coconut oil

  • ¼ tsp sea salt

Dressing:

  • 2 tbsp water
  • 1 tbsp toasted sesame oil
  • Juice of 1 lime

To garnish:

  • Finely grated zest and juice of lime
  • 40g pickled ginger

Method:

  1. Using a spiralizer make the courgetti and fry in a frying pan for 4 minutes. After leave in a bowl to cool on the side
  2. Bring a pan of salted water to boil and drop in the beans and broccoli to blanch for 3 minutes.
  3. Afterwards, move the vegetable to sieve and cool them under cold water. Set aside.
  4. Next soak the arame in hot vegetable water for 15 minutes until draining.
  5. Whiz all the dressing ingredients in a blender until smooth and then pour into the bottom of your jar.
  6. Next put the beans, broccoli, cumber, coriander and drained arame in a bowl and mix together and place in the jar.
  7. Add the smoked salmon cut up into small pieces.
  8. Then on top of the salmon place the courgetti noodles with the lime juice, pickled ginger and extra sprinkling of coriander.
